| dc.description | En el Restaurante La Familia, ubicados en la ciudad de Cuenca, cantón Sevilla de Oro, parroquia Palmas, se aplicó las técnicas de campo, donde se evidencia solo un tipo de elaboración tradicional a base de cuy que es el plato típico del cuy asado con papas junto con ensalada de lechuga y tomate, por ende, se decidió proponer tres nuevas elaboraciones en donde el producto emblemático esté en diferentes técnicas, texturas y diferentes sabores acompañados con guarniciones de productos locales y tenga una buena combinación con el mismo. También se basó la investigación en el Festival del Cuy donde se verá reflejada aún mejor las propuestas, ya que el restaurante tendría gran acogida por personas locales y turistas al presentar en su menú algo nuevo, novedoso e innovador para los mismos. Además, se realizó un enfoque mixto en la investigación lo cual se realizó una encuesta a un grupo aleatorio para el análisis e interpretación de datos cualitativos y cuantitativos de validación para verificar que tan factible son estas nuevas propuestas gastronómicas, para que así el dueño tenga una mejor acogida en su local. Se evidenció a través del paso de la investigación y practica las diferentes técnicas creativas que se puede aplicar al producto principal de este proyecto, lo cual mejora los conocimientos del investigador. En conclusión, la propuesta de una entrada y dos fuertes que se presentó en la validación son factibles con un precio accesible, ya que son adecuadas para el restaurante, al mismo tiempo se concentra en el Festival del cuy esto lo hace ser más vistoso para los comensales. | |
| dc.description.abstract | In La Familia Restaurant, located in the city of Cuenca, Sevilla de Oro canton, Palmas parish, field techniques were applied, where only one type of traditional elaboration based on guinea pig is evident, which is the typical roast guinea pig dish with potatoes together with lettuce and tomato salad, therefore, it was decided to propose three new elaborations where the emblematic product is in different techniques, textures and different flavors accompanied with garnishes of local products and has a good combination with it. The research was also based on the Festival del Cuy where the proposals will be reflected even better, since the restaurant would be very well received by local people and tourists by presenting something new, innovative and innovative for them on its menu. In addition, a mixed approach was carried out in the investigation, which included a survey of a random group for the analysis and interpretation of qualitative and quantitative validation data to verify how feasible these new gastronomic proposals are, so that the owner has a better reception in your local. It was evidenced through the step of the investigation and practices the different creative techniques that can be applied to the main product of this project, which improves the researcher's knowledge. In conclusion, the proposal of one entrance and two forts that was presented in the validation are feasible with an accessible price, since they are suitable for the restaurant, at the same time it focuses on the Festival of the guinea pig and this makes it more attractive for the diners. | |
