Abstract
El siguiente documento se realizó una Capacitación sobre accidentes laborales a los estudiantes de la carrera de gastronomía del primer ciclo del Instituto Sudamericano en Cuenca , en el país de Ecuador durante período comprendido desde Abril hasta el mes de Junio del año 2024 ,con el fin de tratar el problema de múltiples accidentes ocurridos en el área de gastronomía, con el objetivo de capacitar a los primeros ciclos del área correspondiente , en el cual se ejecutó un estudio mixto , mismo que consistió del análisis de conocimiento de los estudiantes con respecto a accidentes laborales , riesgos dentro de la cocina y primeros auxilios . Se trabajo con una población de 39 estudiantes pertenecientes al primer ciclo de la carrera culinaria ,se hizo uso de encuestas digitales , de contenidos didácticos para realizar la capacitación , elaboración de manual de primeros auxilios , elaboración de señalética sobre riesgos para las cocinas de gastronomía , los hallazgos que se recopilaron indican que los participantes tienen una significativa carencia de conocimientos en primeros auxilios , riesgos y accidentes que se ocasionan dentro del diario aprender de los estudiantes , los resultados obtenidos tras impartir la capacitación hacia los estudiantes de gastronomía de primer ciclo se evidencio en un resultado positivo en el aprendizaje de conocimientos de primero auxilios , por lo que la efectividad de la instrucción a los estudiantes es imprescindible en su formación , como conclusión se tiene que los conocimientos sobre primeros auxilios en el área de gastronomía se fortalecerán con el contenido proporcionado para las futuras promociones que formen parte de la carrera. The present work was conducted a training on occupational accidents to students of the first cycle of the gastronomy career of the South American Institute in Cuenca, in the country of Ecuador during the period from April to June 2024, in order to address the problem of multiple accidents occurred in the area of gastronomy, with the aim of training the first cycles of the corresponding area, in which a mixed study was executed, which consisted of the analysis of knowledge of students with respect to occupational accidents, risks in the kitchen and first aid. We worked with a population of 39 students belonging to the first cycle of the culinary career, we made use of digital surveys, didactic content for training, development of first aid manual, development of signage on risks for gastronomic kitchens, The findings that were collected indicate that the participants have a significant lack of knowledge in first aid, risks and accidents that occur within the daily learning of students, the results obtained after providing training to students of gastronomy first cycle was evidenced in a positive result in learning knowledge of first aid. Therefore, the effectiveness of the instruction to the students is essential in their training.
