The main objective is to develop viable products for immediate use in the “Precio Justo” cafeteria, promoting food sustainability, circular economy, and the strengthening of local agriculture. To achieve this, products with the highest waste rates were identified, and methods such as dehydration, pasteurization, and preservation were applied, evaluating their effectiveness through testing. Specific formulations were also developed, respecting the organoleptic properties of the ingredients, and surveys were conducted to assess consumer acceptance. The mixed-methods approach integrates quantitative and qualitative data throughout all phases of the study. The results show that the implementation of preservation techniques not only significantly reduces post-harvest losses but also offers innovative alternatives to the institutional gastronomic offering, while enhancing food security, reducing environmental impact, and improving the profitability of small-scale producers. Ultimately, the study proposes a sustainable management model based on the efficient use of food resources.
