    Propuesta de un menú vegetariano de tres tiempos para el restaurante Libélula Cuenca

    The main objective of this research is to propose a three-course menu at Libélula restaurant in Cuenca. According to interviews and observation techniques it was possible to present the problem of this restaurant which is not having a variety of vegetarian dishes. It is for this reason that a threecourse menu will be created with basic and professional cooking techniques, fusion cooking, avant-garde cooking and decoration techniques, which will represent balanced dishes, promoting the consumption of vegetarian food, avoiding diseases such as obesity, gout and other ailments that affect human beings. This line of research has experimental research since it is about proposing a three-course menu and through the observation of the problem it seeks to solve the needs of the establishment, in addition to quantitative research for the interpretation of the results obtained through the surveys conducted, as an approach to the research a mixed method was applied to find the problem through the use of observation and an interview applied to the supervisor of the Libélula restaurant. In compliance with what was established, three elaborations were made and presented in the facilities of Piedra de Agua, which were well received by the administrative, service and kitchen staff, who tasted the proposals and are interested in using the menu or its elements, giving as a conclusion that the proposal fulfilled its objective of providing new vegetarian options in the restaurant to meet the needs of local customers and promoting gastronomic tourism as it is a place visited by people from all over the world.
