    Fusión de la cocina tradicional cuencana con la alta gastronomía en el Itza Hotel Boutique Internacional

    This research addresses the issue of the limited presence of traditional Cuenca cuisine within the realm of fine dining, using the ITZA Hotel Boutique Internacional’s restaurant as a case study. Its primary objective is to develop a five-course menu that blends the richness of traditional Cuenca cuisine with avant-garde culinary techniques, utilizing local ingredients to highlight its authenticity. A mixed methodology was employed, combining gastronomic and research tools such as prior study analyses, bibliographic references, surveys, technical sheets, logs, and a comprehensive database. The results demonstrate the feasibility and relevance of the proposal, validated by chefs from the ITZA Hotel Boutique International and the Instituto Superior Sudamericana, who highlighted its potential to stand out in a high-end gastronomic setting. Furthermore, the findings showed strong support for the proposal in terms of flavor, presentation, and concept. In conclusion, this research confirms that integrating Cuenca cuisine into fine dining is not only achievable but also represents an opportunity to strengthen local culinary identity, while promoting its cultural value and long-term sustainability. The applied methodology documented every stage of the process, providing a solid foundation for future studies and opening new perspectives to position Cuenca cuisine as a reference in contemporary gastronomy.
