- ItemElaboración de una entrada y dos fuertes usando al cuy como ingrediente emblemático para el restaurante La familia(Instituto Superior Tecnológico Particular Sudamericano, 2023) Torres Pallazhco Mónica FernandaIn La Familia Restaurant, located in the city of Cuenca, Sevilla de Oro canton, Palmas parish, field techniques were applied, where only one type of traditional elaboration based on guinea pig is evident, which is the typical roast guinea pig dish with potatoes together with lettuce and tomato salad, therefore, it was decided to propose three new elaborations where the emblematic product is in different techniques, textures and different flavors accompanied with garnishes of local products and has a good combination with it. The research was also based on the Festival del Cuy where the proposals will be reflected even better, since the restaurant would be very well received by local people and tourists by presenting something new, innovative and innovative for them on its menu. In addition, a mixed approach was carried out in the investigation, which included a survey of a random group for the analysis and interpretation of qualitative and quantitative validation data to verify how feasible these new gastronomic proposals are, so that the owner has a better reception in your local. It was evidenced through the step of the investigation and practices the different creative techniques that can be applied to the main product of this project, which improves the researcher's knowledge. In conclusion, the proposal of one entrance and two forts that was presented in the validation are feasible with an accessible price, since they are suitable for the restaurant, at the same time it focuses on the Festival of the guinea pig and this makes it more attractive for the diners.
