    Propuesta de seis postres con técnicas de vanguardia y repostería, a base de dulces tradicionales de la ciudad de Cuenca, implementados en el restaurante Casa Hortensia

    This project is focused on solving the problem of the Casa Hortensia restaurant, in which a dessert menu has been proposed. For it, different topics have been thoroughly investigated, such as the history of traditional recipes, pastry techniques and the new avant-garde style; that encompasses concepts and procedures. All this information was the basis for developing a menu of sweet preparations, for this gastronomic establishment. It will benefit, since it will include the theoretical bases, the description of each technique, the standardized recipes, accompanied by its cost sheets and database. After a long collection of information and several hours of practice in the laboratories of the South American Institute, different results were obtained; both positive and negative. For the last, different solutions were proposed in order to consolidate a final product suitable for the gastronomic proposal. It was reflected in a good way, by the owners of the restaurant and teachers of the institution, who tasted the six dishes proposed.
