    Rescate y valorización de productos locales para elaborar seis cordiales con hierbas aromáticas y medicinales en el cantón Paute, sector Bulán

    The following research project seeks to rescue and revalue the native aromatic and medicinal herbs of the Bulán community, in the Paute canton. This will be carried out through their transformation into six handcrafted alcoholic beverages called cordials. This initiative aims to respond to the problem found in this rural area, where agricultural overproduction together with the limited use of the natural resources of this locality leads to the generation of large amounts of food waste, which could be part of the industry in an innovative way. Based on these points, the objective arises: the creation of six cordial beverages that promote the use of the native aromatic and medicinal plants of the Bulán community, thus allowing their revaluation, which will be presented to the community to encourage its development. This is the main reason why a mixed approach is used, combining qualitative and quantitative methods, due to the constant interaction with the field of study through interviews, in addition to the analysis carried out on the products together with a group of experts at the ITS, through surveys. This initiative seeks to demonstrate that the innovation of cordial beverages can rescue those plants that over time have lost recognition and that can receive great value by applying appropriate techniques. After presenting the proposal, high levels of acceptance were obtained, and after its socialization with the field of study, great satisfaction was observed. It is recommended to continue constant innovation, always seeking new ways to give new value to products.
