This research work addresses both global and local issues, such as the reduction of biodiversity and the lack of support for traditional agriculture in Cuenca. It is important to highlight that this recipe book will be shared with the Cuenca Tourism Foundation, with the aim of showcasing the incredible gastronomic richness of the region, benefiting both tourists and local residents. The goal of this project is to gather information on local ingredients, documenting them in the designed recipe book, which will strengthen Cuenca's culinary culture and disseminate it locally and nationally. The findings were corroborated using field techniques, such as observation and interviews, which revealed that many of the native products in the area have been overlooked in favor of foreign products. The justification emphasizes the importance of rescuing local ingredients to strengthen cultural identity, as this will support economic development through tourism. It is noted that the loss of biodiversity, competition with agro-industry, and climate change pose risks to these ingredients and their agricultural practices. The project also mentions a lack of cultural value, which has led to the adoption of foreign products and techniques. Furthermore, the results of surveys conducted with authorities from the Foundation and two graduates from the Sudamericano Technological Institute showed that each of these products is accepted and can be incorporated into recipes. This data helped strengthen the project, achieving the established goal: the dissemination of a recipe book featuring native products. One of the purposes of this dissemination is to provide information about the products of the canton.
