- ItemElaboración de un manual gastronómico de menús de 10 días para estudiantes del Instituto Superior Sudamericano de la ciudad de Cuenca(Instituto Superior Tecnológico Particular Sudamericano, 2025) Rivas Sánchez Jhoé SaúlThis work is carried out with an educational, cultural, and nutritional approach aimed at the students of the Instituto Superior Sudamericano in the city of Cuenca, who face food insecurity due to factors such as lack of time, limited culinary education, and the ease of access to low-nutritional-value processed foods. These factors lead students to consume whatever is readily available to avoid hunger and speed up their daily routines. This problem not only reflects a lack of knowledge about food preparation but also reveals a detachment from traditional Ecuadorian gastronomy, contributing to a growing loss of cultural identity. Therefore, the objective of this project was to develop a gastronomic manual with balanced weekly menus designed to promote healthy eating habits among the students of the Instituto Superior Sudamericano in Cuenca, thereby supporting their physical and mental well-being. Through a mixed-method approach, it was identified that many students live under conditions that allow them to cook at home. This insight served as a foundation for creating a nutrition program supported by the manual, as many of these students have the basic tools necessary to prepare simple meals at home. After conducting several preliminary tests before introducing the manual to the students, the results showed a high level of engagement. The manual proved to be effective in practice, receiving better acceptance and ease of use compared to other cookbooks or recipe collections. In conclusion, the aim of this project is to provide students with greater knowledge about how to prepare meals using ingredients readily available in their surroundings, focusing on the processes of production and preservation. This promotes healthier eating habits and better health care while also fostering appreciation and awareness of the rich and diverse gastronomy that Ecuador has to offer.
