    Propuesta de tres postres al plato para personas con restricciones alimentarias en el restaurante Dos Chorreras en Cuenca – Ecuador

    This research project with a cross-sectional scope had the objective of developing proposals for desserts for people with dietary restrictions, in this case for diners with lactose intolerance, gluten intolerance, and diabetes mellitus. For data collection, we used proven material and cited information that contributed to the development of the proposals. Among the information collected, relevant topics such as appropriate food for people with these types of dietary restrictions and products to avoid were cited. In addition, basic and modern baking techniques and methods were recorded and worked on together with recipe cards and logs. The results obtained in this research were three desserts on a plate aimed at people with dietary restrictions, especially for event menus. These were tasted and approved by chefs knowledgeable in modern techniques of pastry and the assembly of dishes for events.
