Since time immemorial, milk has been a symbol of life, nutrition, and abundance. Its richness lies not only in its nutritional composition but also in its ability to be transformed into a variety of products that have added flavor and texture to the tables of countless cultures around the world. “Between Dairy and Flavors. Recipes and Artisanal Products,” traditional and modern knowledge intertwine to pay homage to this precious resource. This book not only celebrates the versatility of milk but also offers an in-depth look at its role in gastronomy and local economic development, especially in regions such as Azuay, where small-scale dairy farmers and artisanal producers play a fundamental role. Beyond being a practical guide to making dairy products, this book is conceived as a bridge between generations. Through concepts, techniques, and recipes, it seeks to preserve culinary traditions, foster entrepreneurship in rural communities, and pave the way for sustainable opportunities, while strengthening the cultural identity of those who create them. We hope this book inspires producers, chefs, entrepreneurs, and food lovers to discover new ways to enjoy and appreciate dairy products. May each recipe and technique presented here serve as a testament to the effort, creativity, and commitment to sustainable development and the preservation of our roots.
