- ItemPropuesta de tres productos con el uso de harina de grillo para atletas de alto rendimiento de la FDA(Instituto Superior Tecnológico Particular Sudamericano, 2023) Ordoñez Salinas Gilson AlexanderThis research study about cricket protein as a protein supplement focused on the development of flour to implement them in three products such as two types of breads with different percentages of this flour and energy bars, the same that will serve as an energy surcharge for athletes of the Federation Deportiva Del Azuay. These will be carried out with previous research on the properties and uses of cricket protein. With a descriptive level of study, which is defined as a research method that uses methods through objective dynamics such as observation, analysis and demonstration, in this way it will be possible to obtain more real data to help solve the problem found. The approach that this research will have will be mixed, since for the collection of information in the field of action a qualitative method is used that, with the help of observation, research and interview, a diagnosis of the problem was obtained. Likewise, with the use of the quantitative method, the survey was used to measure and analyze numerical and objective data in order to provide a solution to the problem found. With these methods applied, it was concluded that the Federación deportiva del Azuay, athletes are subjected to high rates of energy expenditure, so a constant energy recharge is needed, for which are presented the enriched with cricket protein, to supplement this need in athletes. After having applied this proposal, which gave as a result that most athletes liked it and said they were willing to consume them to improve their results in different sports. It was concluded that cricket protein, apart from being a sustainable food, is pleasant to the taste of those who consume it, since its taste, smell and texture are not unpleasant when consumed.
