    Elaboración de una guía de procesos para la producción de cerveza artesanal a partir de maíz de jora

    The consumption of craft beers is constantly growing due to the new styles, unique flavors, and aromas that master brewers are producing. The objective of this study was to create a " process guide for the production of craft beer from jora maize." The study employed a mixed approach, applying field techniques (observation, interviews) at the establishment "La Casa de Allá Restobar" located in the canton Gualaceo; subsequently, a trial-and-error methodology was applied to develop the appropriate recipe for producing craft beer from jora maize. As a final result, the process guide was shared with the establishment's owner, and the obtained beer was validated with the 10 most frequent customers through a tasting sheet. The statistical results were positive, yielding a beer (75% jora maize, 25% barley malt) with a light bitterness, an alcohol content of 4.8%, and correct cereal aromas, citrus flavors, and foam quality.
