    This cookbook takes us on a culinary journey through the Andes, highlighting the importance of Andean products with high nutritional value. Created by faculty and students in the Gastronomy Program at the Instituto Superior Tecnológico Particular Sudamericano in collaboration with the Azuay Rural Social Security Agency, this compendium not only offers delicious recipes but also promotes the cultivation and use of native ingredients, fostering the health and well-being of communities. Each page celebrates the nutritional and cultural richness of ingredients such as quinoa and amaranth. These Andean ingredients not only delight the senses but also honor the relationship between humans and nature. By promoting their cultivation, we are sowing the seeds for a healthier and more sustainable future for generations to come. These ingredients are more than just food: they reflect human adaptability and harmony with the environment. Through this cookbook, members of the Rural Social Security program are inspired to embrace their culinary heritage and cultivate a healthier lifestyle.
