- ItemElaboración de un menú de tapas basado en cocina de producto ecuatoriano para el restaurante LaMaría(Instituto Superior Tecnológico Particular Sudamericano, 2023) Macas León Jorge LuisThe main objective of this degree project entitled "Elaboration of a tapas menu based on Ecuadorian product cuisine for the restaurant LaMaría" is to propose a tapas menu with an Ecuadorian theme, in order to implement the use of Ecuadorian products for the restaurant LaMaría. For this purpose, a methodological process based on a longitudinal for cohort study type, descriptive, with a mixed approach, i.e., both qualitative and quantitative and deductive method, has been chosen. In this sense, field techniques such as observation, interview and survey have been applied; documentary information techniques such as bibliographic references, bibliographic files, paraphrases, quotations; laboratory techniques such as logs, databases, standard files. As regards the validation of the proposal, there were seven participants among the restaurant staff and guests invited by the restaurant's chefs. Among the most relevant results, it is mentioned that each of the tapas had good ratings in each of their organoleptic characteristics, so it is concluded that the use of Ecuadorian products for the elaboration of tapas for the restaurant LaMaría was liked by both the restaurant chefs and the customers, so the tapas menu proposal is attractive, novel and viable for the field of study.
