Menú cíclico hospitalario de 4 semanas para pacientes del Hospital San Juan de Dios
(Instituto Superior Tecnológico Particular Sudamericano, 2025) Luna Peñaranda Brian Javier
This research project aims to design a four-week cyclical menu for patients admitted to San Juan de Dios Hospital, located in Cuenca. A problem identified was the lack of variety in the hospital's menus, which negatively impacts food acceptance, nutritional status, and the recovery process of patients. Monotony in hospital nutrition can lead to disinterest and decreased appetite among patients, resulting in an insufficient intake of essential nutrients for clinical recovery. To address this situation, a menu was developed based on appropriate nutritional criteria, prioritizing the use of local and seasonal ingredients to ensure freshness, quality, and acceptance. The research was conducted with an observational approach and other project-based research tools, utilizing surveys, observation guides, and other instruments to collect data and assess the current situation. The proposal was validated through review by nutrition professionals and patient feedback, ensuring its relevance and feasibility. This project contributes to improving the quality of hospital food, promoting the recovery and overall well-being of patients.
