    Desarrollo de una experiencia gastronómica exclusiva en el Centro Histórico de Cuenca: propuesta de ruta para el segmento medio alto

    The proposal presents a plan to create a special dining experience in Cuenca’s Historic Center, aimed at visitors with a higher purchasing power. The goal is to design a gastronomic route that combines high-quality food with the city’s rich cultural and historical heritage, helping to boost food tourism and improve the visibility of selected restaurants. The main issue identified is the lack of exclusive dining experiences in the Historic Center, which makes it harder to attract tourists who are willing to spend more on unique experiences. To address this, the project aims to create a route that highlights the authenticity of selected restaurants and their connection to Cuenca’s history and culture. The study used a qualitative approach, including surveys that revealed many tourists are unfamiliar with the city’s gastronomy. Restaurants were chosen based on their authenticity, food quality, service, and cultural significance. The proposed route features well-known restaurants such as Sofy en el Parque, Consuelo Bar-Restaurante, El Bueste, Raymipamba, Gaby Lazo, Latitud 0, and El Mercado, each offering a unique dining experience. The research found that food is not just an attraction but also a key element in defining a city’s identity. Additionally, surveys showed that the lack of promotion of exclusive dining experiences limits the number of high-spending tourists. The results suggest that implementing this gastronomic route would help boost the local economy, improve tourism offerings, and preserve Cuenca’s cultural heritage. The study concludes that a strong marketing strategy and excellent customer experience are essential for the success of this proposal.
