    Propuesta de tres postres mimetizados, aplicando frutas emblemáticas del Azuay en el restaurante Botani-k Plant Bar

    The present degree project called "Proposal of three mimetic desserts, applying emblematic fruits of Azuay in the restaurant Botani-k Plant Bar", aims to develop a proposal of three mimetic desserts with emblematic products of Azuay, in order to increase the supply of desserts of showcase for the establishment. For this, a transversal and descriptive methodology was used, with a mixed approach because field techniques such as participant observation, interview and survey were executed, in order to analyze the failures and find a problem and at the same time the solution, giving as a problem the simplicity of the classic desserts presented without having some kind of theme or flavor that generates some experience for the diners. In this way they develop three mimetic desserts with fruits: apple, pear and lemon fused with plants such as mint, lemon verbena and dill Among the main results it is obtained that the mimetic desserts will be in trend for a long time thus being eye-catching for customers generating sales and good reviews for the establishment, with the administrative approval, kitchen and owner of Botanik-Plant bar it is concluded that this degree project was accepted, mainly by how it looks and complementing with flavor and all textures also will be implemented in the restaurant.
