    Propuesta de seis mini tortas libres de gluten para personas celiacas en la pastelería Mishquis Del Victoria, Cuenca

    Celiac disease is a condition that is present in a large percentage of people worldwide, a disease which prevents them from consuming mainly gluten-containing foods, the following work aims to present a proposal of six mini gluten-free cakes suitable for the consumption of celiac people, proposals presented at the "MIshQUis del Victoria" bakery in the city of Cuenca, this as a result of a problem identified when conducting field studies; the main problem is the lack of products suitable for the intake of this population group. The main objective is to propose the elaboration of six mini gluten-free cakes in the "MIshQUis del Victoria" located on the long street and President Borrero, the data analyzed and recorded were carried out with a mixed approach;considering mainly the description and observation of qualities present in pastry, without the need for numerical measurements, based on inferences to develop a solution and identification of a problem; by attaching the application of surveys and numerical data for obtaining results of the feasibility of the proposal, all to select the most optimal path to follow for solving the existing problem. Based on a product validation carried out at the establishment, it was determined that the proposals submitted would be feasible in their implementation, the proposal was well-connected to the establishment, being well accepted by the selected random diners and staff working in the hotel, in addition, although they are elaborations made with products other than conventional, it was widely accepted as well as by people who do not consume gluten, people in general and chefs-cooks.
