    Mejora de la calidad y optimización de procesos para el restaurante Five 6 & Up, ubicado en la ciudad de Cuenca, para el periodo 2025-2026

    The present project aims to solve the problem found within the restaurant "Five 6 & Up", since it currently has a waste of raw material which instead of receiving a better use is discarded, Thus bringing economic problems and generating an input expense of the same. The main objective of this research is to reduce product waste and improve the use of raw materials through recipes based on the waste of products, in order to make them more durable. Additional as results were obtained the different elaborations of sauces and kimchis based on the scraps of dishes that are prepared in the restaurant, these being very well approved by the owner and staff. To conclude, the present project is satisfactory and at the same time gratifying to emphasize that each of the objectives set were met, it was also achieved to incorporate new preparations optimizing the waste of the different dishes prepared in the restaurant.
