    Manual de blends naturales a partir de las especies vegetales provenientes de la parroquia de Bulán (Paute) y su maridaje en el restaurante El Club del Queso.

    In the city of Cuenca there has been a deficiency in terms of spaces where tea and infusions are consumed with the use of products grown in the region. For this reason, the present research aims to design and develop a manual of tea blends and signature infusions, from endemic ingredients grown in the area of Bulán, Paute canton, province of Azuay, along with other striking natural products. This initiative seeks to revalue local products through the creation of the manual, which will allow the integration of rare gastronomic experiences. The study is framed within a methodological process with a mixed approach, descriptive research, cross-sectional and deductive method. Observation, focus group, laboratory techniques and documentary analysis were used as techniques for the collection of information. The population consisted of seven participants who sensorially validated the proposal of author's blends, obtaining as results a high acceptance of the proposed blends with an inclination to intense flavors and aromas, with the use of honey as a natural sweetener. In conclusion, the manual designed has the intention of designing new experiences among infusion lovers and contributing to local farmers to give added value to their products, promoting them in an innovative way.
