The objective of this research project is to develop three new products by implementing improvements, managing different preservation techniques, thus creating good textures and presentation to facilitate their consumption. The use of mixed methodology with a longitudinal study will be considered, through field techniques, which will allow us to correctly develop the preparations to maintain a quality product. The process that maintained each preparation was carried out according to the techniques studied for the conservation process, addressing the doubts that arise along the way to finalize in an appropriate manner for the acceptance of the already prepared products.
